The beautiful biodiverse farm in Santa Rosa de Lima, Guatemala was purchased by the Ordonex-Montenegro family in 2014. They named the new farm “los Conejos” for the family pet rabbits.
The family planted numerous variety of coffee trees, including Bourbon and Cataui for natural processing and Mundo Novo, Gesha and others for newer methods like anaerobic processing and carbonic maceration. Other diverse plantings include orange, lemon, loquat, jocote, and banana which improves the multilayer cultivation improving long-term sustainability.
This decaf coffee is special; the richness of the volcanic soil and the sweetness verified by the scientific methods is backed by the time and efforts the owners have poured into every tree and cherry. The roast level is a City roast, or a light-medium to maintain the silky acidity present with a substantial body.
